Peppermint Caramel Tart

Ingredients: 1 PACKET TENNIS BISCUITS; 1 TIN CARAMEL TREAT; 1 LARGE PEPPERMINT AERO CHOCOLATE; OR 2 PEPPERMINT CRISPS; 500ML FRESH CREAM.

Method: BEAT FRESH CREAM WITH AN ELECTRIC BEATER UNTIL THICK AND IT PEAKS; ADD CARAMEL TREAT TO WHIPPED CREAM AND BLEND WITH ELECTRIC BEATER; WARNING: DO NOT BEAT TOO MUCH OTHERWISE IT WILL GET RUNNY; GRATE CHOCOLATE WITH COa*se GRATER; IN THE FOLLOWING ORDER, PLACE THE FOLLOWING INGREDIENTS IN A SQUARE DISH 20CM SQUARE; LINE THE BASE WITH HALF THE TENNIS BISCUITS; COVER BISCUITS WITH HALF THE CREAM/CARAMEL MIX ; COVER CREAM/CARAMEL MIX WITH HALF THE GRATED CHOCOLATE; REPEAT, LINING THE CHOCOLATE WITH THE BALANCE OF THE TENNIS BISCUITS; COVERING THE BISCUITS WITH THE BALANCE OF THE CREAM/CARAMEL MIX; THEN COVER CREAM/CARAMEL MIX WITH BALANCE OF THE GRATED CHOCOLATE; PLACE IN FRIDGE - ALLOW TO SET 6-8 HOURS. *

CHOC-CARAMEL SLICE:

INGREDIENTS: 1 cup plain flour - 1/2 cup almond meal - 125g unsalted b*tter, melted - 3/4 cup caster sugar FILLING: 1/3 cup golden syrup - 125g unsalted b*tter, melted - 2 x 400g cans sweetened condensed milk TOPPING: 200g dark cooking chocolate - 2 teaspoons vegetable oil.

METHOD: Preheat the oven to 180C. Place the flour, almond meal, b*tter and sugar in a bowl and mix well to combine. Press the mixture into a 20cm x 30cm slice tin lined with non-stick baking paper and bake for 15 minutes or until golden. Allow to cool. For the filling, place the golden syrup, b*tter and condensed milk in a saucepan over low heat and stir for 6-8 minutes or until thickened slightly. Pour the filling over the base and bake for 20 minutes or until golden. Refrigerate for 30 minutes or until cooled completely. TOPPING: place the chocolate and vegetable oil in a heatproof bowl over simmering water and stir until melted and smooth. Spread the chocolate over the caramel and refrigerate for 2 hours or until set. Slice. Serves 6-8. *
